Simple Quinoa Salad with Chickpeas

Make night before for pre-made lunches


  • Chickpeas half can (full can if you want leftovers)

  • 1.5 - 2 cups Quinoa

  • 2-3 Bell peppers

  • 1 Zucchini

  • Large bunch Greens of choice: Kale, spinach, red leaf lettuce (my choice)

  • Garlic


  1. Cook quinoa as directed.

  2. In pan with coconut oil, saute bell peppers, zucchini, chickpeas and garlic. When cooked add cooked quinoa.

  3. If you are preparing for lunch, put quinoa veg mixture aside in portable containers. In morning add the greens of choice. Top with dressing of choice (I add dressing to quinoa mixture at the bottom, then shake at lunch time to combine it all with lettuce so lettuce doesn’t become wilted.)

  4. I suggest Okanagan Creek dressing or homemade (apple cider vinegar, olive oil, chilli flakes, sea salt, black pepper, (optional) mustard)

Not on the go? Add your quinoa mix to greens of your choice, and dressing for fresh filling dinner
