Quick Chia Seed Pudding

Chia Seed Pudding
(prepare overnight or in the morning)
Chia seeds are a great source of plant based protein and omega-3 fatty acids. Great breakfast or lunch.
2 cups coconut milk/almond milk/dairy alternative
½ cup Chia Seeds
½ teaspoon vanilla extract
3-4 drops liquid stevia/ 1 tsp maple syrup (or sub any sweetener)
Optional: ¼ teaspoon cinnamon powder
Pour mixture into a jar or glass container and place in the refrigerator for at least 4 hours or overnight to let gel. Stir or whisk a few times within the first hour to help it gel evenly.I prefer to make this at night to have ready for a fast breakfast the next day.
In the morning top with your favourite fruit like apples, banana or berries. Nuts like almonds, cashews, seeds like sunflower or pumpkin.
It is also great to make in the morning for a delicious pre-made dessert at night.
Tip: store in mason jar for an easy, grab on the go lunch or breakfast!
